Swedish Almond Butter Cookies

Gather:

• 1 Cup unsalted butter, room temp
• 1 Cup granulated sugar
• 3 Cups all-purpose flour
• 1 Tbsp. baking powder
• 1/2 Tsp. salt
• 4 Tbsp. almond extract
• 3 Tbsp. heavy cream
• 1 egg, beaten
• Swedish pearl sugar

Instructions:

1. Preheat oven to 350°F

2. Combine butter and sugar in a large bowl. Using a mixer at medium high speed, beat until light. Add flour, baking powder, and salt; beat well. Add almond extract and heavy cream.

3. Turn dough out and work into a ball. Cut into 4 portions and shape each into a ball. Flatten each into a 4 inch circle. Refrigerate for 10 minutes.

4. Cut each round into 10 slices, then cut those slices into halves. Place cookies onto baking sheet. Brush tops with beaten egg and sprinkle with pearl sugar.

5. Bake for 10 minutes and remove from over. Reduce the heat to 300°F and return to the oven for a few minutes, or until the cookies are golden brown and crispy.

6. Share & enjoy!
